Chinese Beef with Peppers
3 tablespoons corn flour 575g (1 ¼ Ib) topside of beef cut into thin strips 3 medium red or green peppers cut into thin strips 4 tablespoons vegetable oil 3 medium onions chopped 3 garlic cloves crushed 3 tablespoons Soya sauce 225ml (8 fl oz) water
Toss the beef strips in the cornflour and fry in the oil in a large frying pan until no pink on the beef; set aside.Reduce the heat and add the onion, peppers, garlic and cook for 5 min or until the onions are soft. Return the beef and any juices to the pan.Stir in the soya sauce and water and continue cooking and stirring until the sauce has thickened –About 4 min Serve with rice
One Pot Pork and Beans
6 teaspoons vegetable oil 375g (12oz) pork fillet, cut into thin slices 1 onion chopped 1 garlic clove crushed 185g (6oz) wholewheat pasta 440g (14fl) can cannelloni beans 9 teaspoons dried or fresh parsley 9 teaspoons tomato puree 1 litre (32fl oz) chicken stock Salt and pepper(If you cannot find cannelloni beans use Alubia blanca from Mercadona)
Fry the pork in a large saucepan until brown, remove from the pan and set aside.Add the onion and garlic to the pan and cook until beginning to soften, return the pork to the pan, stir in the pasta, tomato puree, drained beans, parsley, and chicken stock and season with salt and pepper.Bring to the boil cover the pan and simmer stirring occasionally, for about 20 min or until the pasta is cooked, add more stock if required. Serve immediately with crusty bread.This meal can be easily be prepared underway and provides a filling hot meal for that long night watch, with only one saucepan to wash up.
